Taking the Mundane Out of Meal Prep

Meal prep often sounds boring and time consuming, but I’m here to tell you it 100% does not have to be that way. Consider making meals that are delicious and versatile, so while you'll still be eating the same ingredients, you'll be eating them as a completely different meal. Here are a few of my favorite recipes and ideas that last the week and can be eaten in multiple ways.



Big Egg + Veggie Scramble

Keep breakfast prep nice and easy by making an 8 egg scramble with all of your favorite veggies once in bulk. Eat it in a different way for each day of the week:

  • On a tortilla as a breakfast taco, burrito, or quesadilla

  • Onto a piece of avocado toast

  • By itself with a side of fruit

Quick and easy, versatile, and so much more satisfying than your typical grab-and-go breakfast!⁣

Mexican 'Crack' Chicken

I make this recipe at least once a month on average. Remember, you can always modify: I add an extra can of beans, a can of corn, cut the cheese, and sub greek yogurt for the cream cheese -- and it still never fails to please. Eat it for breakfast with a fried or poached egg on top, for lunch as a burrito bowl, or for dinner as taco filling.


Overnight Oats

Another fun breakfast option that has endless possibilities! Grab some mason jars and start with your basic base in each to let sit overnight:

  • 1/2 cup dry rolled oats,

  • 1/2 cup plant-based milk of choice

  • 1 tbsp chia seeds

  • 1 tbsp honey or maple syrup (optional)

  • 1/4 cup plain greek yogurt (optional)

  • 1/4 tsp vanilla extract (optional)

Then throw on some toppings! Get creative and try a new combo for each morning:

  • Banana

  • Berries

  • Apple

  • Coconut shavings

  • Cinnamon

  • Chocolate chips

  • Nuts or nut butter of choice
